Welcome again to Brownies and Coffee. If you are a returning visitor, you know what to expect in my attempts to wake up your taste buds with an outright face plant into the indulgences of brownies and coffee. This culinary hobby and passion that I have always had in making brownies all with a unique twist is kind of now an unbelievable experience with all the attention erupting from this blog. This particular brownie is called "The Red BEET Velvet Brownie Royale." Be on the lookout for this delicious recipe in the soon to be released book, Brownies and Coffee.

I'll be the first to admit; this one just truly surprised me. How do you use a roasted root vegetable beet to red dye chocolate squares of fudgy deliciousness, in substitution for the controversial red dye #40, which has been linked to certain allergic reactions and has been linked to cancer...true fact

The Red Beet Velvet Brownie Royale has to be the one brownie to be inducted into the Brownie Hall of Fame. Never in my wildest dreams would I have ever imagined that I would be inspired to try this root vegetable in my beloved brownies. I have to promote the fact that this brownie not only tastes pretty good, but it's also packed with a lot of healthy nutrients.



If you just happen to be a Plant Physiologist and reading my blog, you probably already know this, but for those of us who are not Plant Physiologist, I'll attempt to explain what I have learned about the Beet. Beets contain a compound known as betalains which it's Latin name comes from the common beet. The deep vibrant red color of beets is the result of betalain pigments and are known widely to be used commercially as a natural food dye. Additionally, the nitrates in beets help expand blood vessels and are believed to lower blood pressure and improve exercise performance.


These beets (not the headphones) are rich in antioxidants, high in fiber that lower risk of constipation, hemorrhoids, diverticulitis and are a good source of vitamin C. Beets have been shown to function as an anti-inflammatory compound and benefit eye and nerve tissue health. And lastly, this vegetable is known to improve brain function.


So in summary, you should listen to your mother and eat your root vegetable brownies! The only thing about this particular recipe that will knock you off your diet feet is the cream cheese topping, which in my opinion actually makes the brownie, but may not be seen as all that healthy. Other than that, seriously, this brownie has it going on, made with rich dark chocolate and has an extraordinary paring with your favorite Ethiopian favored cold brew or hot french press coffee.
